Add yeast, sugar and 2 tablespoons of flour to the water, stir vigorously and let stand for 10 minutes. Then knead all ingredients together intensively for 10 minutes.
Grease a bowl with oil, put the dough in it and let it rest warm for 30 minutes. Place the dough on a floured surface and fold from the edge to the center, turn over and form a ball. Let rise again in the bowl for 30 minutes.
Roll out the dough thinly and cut it in half with a sharp knife. Now cover each dough surface as desired. For example: cooked ham, fresh tomatoes, pickled tomatoes, mozzarella, garlic, onions and a little oregano. Make sure that the edges remain free.
Starting lengthways from the narrow, round side, roll the dough up and form a filled stick. Carefully pull this lengthways so that a pretzel can easily be formed. Brush with egg yolk and sprinkle with some coarse salt if you wish.
