Ingredients
- 800 g potato (s), waxy
- 500 g pumpkin meat, prepared
- 2 tablespoons oil
- 1 vegetable onion (s)
- 2 cloves garlic)
- 1 teaspoon sugar
- 0.5 ½ lemon (n)
- 100 ml meat broth
- 2 tablespoon vinegar, (white wine vinegar)
- 6 spring onion (s)
- 150 g bacon

- First cook the potatoes in salted water for about 25-35 minutes and let them cool down a little. Clean, quarter, core and cut the pumpkin into cubes.
- Dice the onion and fry in oil until translucent. Add pumpkin cubes and fry for 2-3 minutes. Then stir in the finely chopped garlic, sugar, lemon juice and the meat broth and with the lid closed, do not cook too soft for about 8 minutes.
- In the meantime, peel and dice the potatoes, cut the spring onions into rings and mix both together with the cooked pumpkin as well as salt, pepper and vinegar.
- Dice the bacon, fry it in a fat-free pan until crispy and finally pour it over the salad.
