Quiche with Fried Mushrooms and Herbs

I really like to cook open French shortcrust pastry pies with meat, mushroom or fish filling. Kish is a great option for an original treat for a large company. Today I bake just such a delicious and satisfying pie made from crumbly sour cream dough with a tender and juicy mushroom filling.

Servings: 6

Ingredients

For the test:

  • Sour cream – 100 g
  • Butter (soft) – 50 g
  • Flour – 120 g
  • Salt – on the tip of a knife

For filling:

  • Champignons – 300 g
  • Sour cream – 100 g
  • Eggs – 2 pcs.
  • Hard cheese – 70 g
  • Onions – 70 g
  • Vegetable oil – 1 tbsp
  • Salt to taste
  • Ground black pepper – 1 pinch
  • Fresh herbs (dill and parsley) – 3-4 sprigs

Directions

  1. Prepare everything for the cake. The butter should be soft – place it in a warm place shortly before cooking. Peel and wash the onion. Champignons can simply be peeled. Turn on the oven to heat up to 200 degrees.
  2. Add sour cream, salt and flour to the butter (a little less than a 200 ml glass).
  3. Use a spatula to combine all the dough ingredients into a uniform ball.
  4. Line the split mold (my mold is 19 cm in diameter) with parchment. Distribute the dough in an even layer approximately 0.3 cm thick, forming a rim.
  5. Bake the cake in an oven preheated to 200 degrees for 10 minutes. You can prick the bottom with a fork to prevent the dough from rising when baking.
  6. Cut the champignons into large pieces, onions into small cubes.
  7. Heat vegetable oil in a frying pan and fry the onion in it until transparent.
  8. Add the mushrooms to the pan and fry with the onions until tender, about 8-10 minutes.
  9. Grate the cheese on a fine grater. Finely chop the greens (I decided to use only dill)
  10. To pour, combine sour cream, salt and eggs in a bowl. Stir with a whisk.
  11. Put the onion-mushroom filling in a mold with a prepared dough base. Spread fresh herbs on top.
  12. Pour the sour cream and egg mixture over the filling. Place the pie in a preheated oven and bake at 180 degrees for 20 minutes.
  13. Then sprinkle some grated cheese on top of the pie. Return the quiche to the oven and bake for another 10 minutes.
  14. Quiche with fried mushrooms and herbs is ready. Open the springform pan and cool the pie before serving.
  15. The crunchy edges of the dough go well with the juicy mushroom filling.
  16. Be sure to prepare such a cake, it is not difficult at all, and the result is always excellent!
