Ingredients
- 180 g couscous
- 180 ml vegetable stock
- 0.5 ½ cucumber (s)
- 1 bell pepper (s)
- 200 g tomato (s)
- 2 spring onion (s), or 1 onion, halved in thin slices)
- 6 basil leaves or more
- 0.5 ½ lemon (s), the juice from it
- 2 tablespoon olive oil
- salt and pepper
- Garlic powder

- Dice the cucumber, bell pepper and tomato. Cut the spring onions into rings. Put everything in a bowl. Roughly chop the basil, add. Add the lemon juice (amount as you like, I usually use the juice of a whole lemon - I like it sour), as well as the olive oil. Season with salt, pepper and garlic powder.
- Pour the couscous with the hot vegetable stock in a bowl and let it soak for a few minutes. Then add to the bowl with the vegetables and stir. If necessary, add the spices to taste again.
