In Italy, it was believed that this dessert has an invigorating, stimulating effect, so the Italian nobles regularly used it before love dates. That is why I decided to post this recipe, on the eve of Valentine’s Day 🙂

6 pcs Eggs
150 g Sugar
500 gr Mascarpone cheese
400 ml Espresso
50 gr Cognac
200 gr Savoyardi cookies
Directions
We start cooking with eggs. The first thing I do is rinse them under running water. I recommend doing this with soap. We carefully separate the whites from the yolks. Please note that not a single drop of yolk should get into the whites, otherwise they will not churn.
Beat the whites for a few minutes until characteristic, stable peaks appear. To make the whites easier to beat, I recommend adding a pinch of salt or a little lemon juice to them.
We return to the yolks. To them, you need to add 150g. sugar. Then, with the help of a mixer, the yolks are beaten until the mixture acquires a delicate creamy hue.
Add mascarpone cheese. If you could not find mascarpone cheese and you have a question about how it can be replaced, then I will immediately say that nothing. If you still decide to replace it with another curd cheese like Philadelphia, then you will not get a tiramisu, but some other dessert, with curd cream. We begin to gently mix it into the mixture of yolks and sugar. When the cheese is slightly dispersed, continue mixing with a blender. It is better to start at the minimum speed, gradually increasing.
Add the proteins that we whipped earlier to the resulting mixture. Now you need to very carefully, mix the contents of the bowl, making unhurried movements with a spoon from bottom to top, so that as much air as possible remains in the whipped protein mass. It is important to note that a mixer cannot be used for this procedure. In a few minutes, we should have a very light and airy tiramisu cream.
Let’s move on to the filling. We need 400ml. espresso. You can brew it yourself, but I didn’t make my life difficult and bought a ready-made espresso from a coffee shop next to my house. Pour the espresso into any wide flat-bottomed dish. Add 50g. cognac. We take Savoyard cookies and dip each piece of it in coffee with cognac with our fingers. It is important to remember that you should not lower the cookies for more than 3 seconds, otherwise they will get wet and lose their shape.
Preparations are over, let’s proceed directly to the assembly of the tiramisu. Usually, small portioned baking dishes are used for this dessert, however, in honor of Valentine’s Day, I want to make a heart-shaped tiramisu, so I will use this baking dish.
We put cookies soaked in coffee in it. Top with tiramisu cream. When the cookies are completely covered with cream, spread the remaining pieces in a second layer. Fill the cookies with the rest of the cream. We remove the form with dessert in the refrigerator for 8 hours.
Tiramisu is completely ready. Cocoa or grated chocolate is usually used to decorate it.
