Ingredients

  • 1 tablespoon clarified butter
  • 1 onion (s), chopped
  • 1 apple, e.g., Boskoop, finely diced
  • 1 tablespoon sugar
  • 3 tablespoon balsamic vinegar
  • 100 ml orange juice, freshly squeezed
  • 100 ml vegetable stock
  • 100 g cranberries
  • 1 glass red cabbage, drained
  • salt
  • pepper

Instructions

  1. Leave out the fat, sauté the onion and apple. Sprinkle with sugar and caramelize.
  2. Add balsamic vinegar, orange juice, vegetable stock and cranberries, sauté for 15 minutes. Add the red cabbage and heat, season to taste.
