Red Fish and Broccoli Pie

Delicious yeast dough pie stuffed with broccoli and red fish with rice. The dough is soft, airy, the filling is juicy and satisfying. Prepare such a fish pie for the New Year’s table!

Ingredients

For the dough:

  • Wheat flour – +/- 500 g
  • Sugar – 1 tbsp
  • Salt – 1 teaspoon
  • Warm milk – 250 ml
  • Vegetable oil – 30 ml
  • Egg – 1 pc.
  • Dry yeast – 7 g

For filling:

  • Fillet of red fish (salmon, trout) – 320 g
  • Broccoli (frozen) – 400 g
  • Boiled rice – 200 g (120 g raw)
  • Bulb onions – 1 pc. (150 g)
  • Salt – 1 teaspoon (taste)
  • Ground pepper – to taste
  • Vegetable oil (or butter) – 2 tbsp
  • Egg white – 1 pc.

To grease and sprinkle on the cake:

  • Yolk – 1 pc.
  • Milk – 1 teaspoon.
  • Roasted sesame seeds – to taste

Directions

  1. Warm milk, yeast, sugar, stir. If you are unsure about your yeast, let it sit for 10-15 minutes for the yeast to work and bubble up. Add egg, vegetable oil, mix everything.
  2. Add some flour (300 g), salt. Mix in flour, add more (150-200 g). The dough will be soft, sticking a little to your hands.
  3. Grease a bowl with vegetable oil, form the dough into a ball, put in a cup, cover with foil and put in a warm place for about 1 hour, to rise.
  4. Prepare the filling. Cut the fish fillet into small pieces.
  5. Cut the onion into small cubes, fry in oil until transparent.
  6. Boil rice in salted water, cool.
  7. In a bowl, combine boiled rice, fried onions, fish, egg white, salt and pepper.
  8. The dough came up, increased by 2-3 times.
  9. Divide the dough into two unequal parts, knead, roll into balls.
  10. Roll each part into a layer 0.5 cm thick. Most will be the bottom of the pie, roll it out a little more than the size of the mold.
    Lubricate the mold (28 cm in diameter) with vegetable oil, lay out the dough, form the sides.
    Pour broccoli with boiling water for 5-10 minutes, drain the water through a sieve, cool, cut the inflorescences.
    We spread the filling in the form with the dough, level it. First fish and rice, then broccoli.
  11. Roll out the second part of the dough. Cover the filling. Pinch the edges of the dough, make a hole in the center for steam to escape. Cover the cake with a napkin and leave for 10 minutes to rise.
  12. Mix the yolk with one teaspoon of milk, gently grease the pie, sprinkle with sesame seeds on top. Bake yeast dough fish pie in a preheated oven for 30 minutes at 180 degrees. Grease hot pie with butter.
  13. Ruddy and very appetizing fish and broccoli pie is ready!
