Rice Salad with Oranges and Pine Nuts

Servings: 2
Ingredients
- Boiled rice – 180 g (1 glass)
- Oranges – 1.5 pcs.
- Pomegranate seeds – 50 g
- Pine nuts – 30 g
- Parsley – 3-4 sprigs
For refueling:
- White wine vinegar – 1.5 tbsp
- Freshly squeezed orange juice – 0.25 cups
- Orange peel – 1 teaspoon
- Olive oil – 1 tbsp
- Ground black pepper – 0.25 teaspoon
- Salt – 0.25 teaspoon
Directions
- The pine nuts need to be roasted. To do this, heat the pan over medium heat. Fry the nuts without oil, stirring occasionally, for 10 minutes.
- Remove the required amount of zest from one orange.
- Cut off a third. Squeeze the juice out of the smaller part.
- Peel the rest of the oranges from the peel and film.
- We clean the pomegranate, take out the grains.
- My parsley and chop.
- Separately mix orange juice and zest, olive oil, vinegar, salt, and pepper.
- Mix all ingredients. Pour the dressing over the rice salad, stir.
Let it brew for 30 minutes.
- Rice salad with oranges is ready.
