Rice with Herbs and Pine Nuts

Basmati loose rice is prepared with herbs and pine nuts. Rice with cheese is served.

Ingredients
- Basmati rice – 1 cup
- Roasted pine nuts – 0.25 cups
- Parmesan cheese (shredded on a grater) – 3 tbsp
- Garlic (minced) – 1 clove
- Water – 1 glass
- Chicken broth – 1 glass
- Salt – 0.25 teaspoon
- Green onions (chopped) – 0.25 cups
- Fresh basil (chopped) – 1 tbsp
- Fresh thyme (chopped) – 1 teaspoon.
- Ground black pepper – 0.5 teaspoon.
- Olive oil – 1 teaspoon.
Directions
- Heat a medium skillet over medium-high heat, pour in the olive oil. Put the rice and garlic in the pan, cook, stirring occasionally, for a couple of minutes.
- Pour rice with 1 glass of water and broth, add salt, bring to a boil. Cover the pan with a lid, reduce heat, cook the rice for about 15 minutes, until the liquid evaporates completely. Remove the pan from the stove and let the rice stand for 5 minutes.
- Add onion and pine nuts to the rice, mix. Sprinkle the finished dish with cheese, basil, thyme, and black pepper.
