Rybnik with Herring, Potato Dough

Rybnik is a fish pie. There are many cooking options for this dish. Today we will prepare a fishmonger with salted herring and onions, from potato dough. A pleasant balance of sweet dough and salty filling transforms simple homemade baked goods into an original and unusual treat!

Ingredients

For the dough:

  • Flour – 150 g
  • Butter – 150 g
  • Potatoes – 2 pcs.
  • or mashed potatoes – 150 g
  • Sugar – 1 teaspoon
  • Salt – 0.25 teaspoon
  • Ground black pepper – 2 pinches

For filling:

  • Salted herring fillet – 150 g
  • Bulb onions – 1 pc.
  • Bread crumbs – 1 tbsp
  • Apple cider vinegar – 2 teaspoon
  • Sunflower oil – 1 teaspoon
  • Sugar – 1 pinch
  • Ground black pepper – to taste

Directions

  1. Prepare all the ingredients you need for the fishmonger.
    The butter must be cold, so remove it from the refrigerator just before you start making the dough.
  2. We will prepare the dough for the fishmonger based on mashed potatoes. To do this, the first step is to boil the potatoes.
    Peel the potato tubers, cut into slices and transfer to a saucepan.
  3. Cover potatoes with water, place on the stove, over high heat, and bring to a boil.
    Reduce heat, add salt water and set aside potatoes to cook.
  4. When the potatoes are boiled (after about 20 minutes), drain the water from it, and mash the potatoes in mashed potatoes.
    Let the mashed potatoes cool to room temperature.
  5. When the puree has cooled down, start making the dough.
    You can knead the dough for the fishmonger with your hands, I used a food processor.
    Pour flour, cold butter into a bowl (or bowl) (for manual kneading, rub on a coarse grater), add sugar, salt and black pepper.
  6. Grind everything to a crumb state. Add mashed potatoes to the crumb.
  7. Knead the dough again, which should now come into a ball. If not, sprinkle the dough with water and knead again.
  8. Transfer the finished potato dough to a bag or wrap in plastic wrap and refrigerate for 1 hour.
  9. For the filling, cut the salted herring fillets into small cubes, removing the small bones.
  10. Transfer the chopped herring to a bowl, add apple cider vinegar, black pepper, sugar and bread crumbs. Toss fish with additives.
  11. Peel the onions and also cut them into small cubes.
  12. Add the onion to the herring, pour in the sunflower oil and stir again.
  13. Turn on the oven to heat up to 200 degrees.
    Remove the “rested” dough from the refrigerator and roll it into a square between two sheets of baking parchment (no extra flour). The thickness of the dough should be about 1-1.5 cm.
  14. Place the herring and onion filling in the form of a rectangle in the center of the dough layer.
  15. Close the filling with the edges of the dough so that there is a small hole in the center along the entire length. Pinch the edges.
  16. Bake the fish in an oven preheated to 200 degrees for about 30-35 minutes, until golden brown.
  17. Rybnik with herring is ready. Cut the herring pie into slices and serve. We liked the fishmonger most of all in the already cooled form.
