Recipe for Italian “Grissini” breadsticks. This recipe for making grissini differs from others in that in addition to wheat flour, rye is included in the dough. The addition of crushed flax seeds is also unusual. It turns out a delicious and healthy snack.
Ingredients
Rye flour – 1 cup (200 ml)
Wheat flour – about 2.5 cups + for sprinkling
Flax seeds – 0.3 cups
Active dry yeast – 1 sachet (11 g)
Warm water (50 degrees) – 1.5 cups
Olive oil – 2 tbsp + for lubrication
Liquid honey – 1 tbsp
Salt – 1.25 teaspoon
Flax seeds (for sprinkling) – 2 tbsp
Directions
Fry flax seeds (0.3 cups) in a dry frying pan for 5-7 minutes, let them cool. Grind the seeds in a blender.
Combine 1 cup wheat flour with rye flour and yeast. Add warm water, oil, honey and salt. Stir until smooth. Add chopped flaxseeds and leftover flour (how much the dough will take).
Place the dough on a floured table. Knead the dough, adding flour, until smooth and elastic (knead for about 6-8 minutes).
Place the dough in a large oiled container. Cover the container and let the dough rise in a warm place for about 1 hour (until it doubles in volume).
Beat the approaching dough on the table, sprinkled with flour. Cover the dough with a towel and let it rest for 10 minutes.
Divide the dough into 2 pieces. Roll each piece into a 40 x 20 cm rectangle. Brush generously over the dough with water. Sprinkle with flax seeds on top (1 tablespoon. L. For each layer). Press them gently into the dough.
Cut the dough across into strips 2.5 cm wide (16 strips). Place the dough strips on a baking sheet. You can twist them a little. Cover with a towel and let the dough sit in a warm place for about 30 minutes (until doubled).
