Ingredients

  • 200 g flour
  • 100 g butter
  • 1 egg yolk
  • 1 pinch (s) salt
  • 3 tablespoons water
  • 3 sprigs sage
  • 1 onion (s)
  • 150 g bacon, diced
  • 1 tablespoon butter
  • 2 egg (s)
  • 2 egg yolks
  • 250 ml milk
  • 150 g crème fraîche
  • salt and pepper

Instructions

  1. Knead the flour, butter, 1 egg yolk, salt and water in the food processor with the cutting knife to a smooth dough in the shortest possible time, then chill for an hour.
  2. Chop the leaves of a sprig of sage, then finely chop the onion.
  3. Leave the butter in a pan. Braise the bacon and sage in it, then leave to cool.
  4. Mix the eggs, 2 egg yolks, milk and crème fraiche, season with salt and pepper.
  5. Roll out the cooled dough and place in a greased quiche dish. Spread the bacon and onions on the dough. Pour the egg milk over, garnish with the remaining sage by simply draping the bouquets decoratively on the cake surface.
  6. Bake in the preheated oven at 190 ° C on the bottom rack for about 25-30 minutes until light brown.
  7. Tip: As a variant, you can chop some sun-dried tomatoes (soaked in oil) and bake them spread over the topping.
