Salmon Fillet Wrapped in Bacon on Mediterranean Oven Vegetables

Instructions

Wash and clean the vegetables and cut into bite-sized pieces. Halve or quarter the potatoes, depending on their size, cut or press the garlic cloves as desired.
Put the vegetables in a freezer bag, season with the herbs and add plenty of olive oil. Close the freezer bag and shake or turn the vegetables well so that the spices and oil are well distributed.
Place the vegetables in a baking dish in the preheated oven and cook at 200 ° C top / bottom heat for about 45 minutes. Stir several times.
Wash the salmon fillets, pat dry, season with a little salt and lemon pepper and wrap each in 3 to 4 slices of bacon. Fry the fish on both sides in the pan until crispy and fry for 10 to 15 minutes.
Serve the fish with the vegetables.
