Saltwater Fish with Couscous and Zucchini Ingredients

  • Olive oil – ½ cup
  • Small zucchini – 600 g
  • Zest and juice of 2 limes
  • Tomato paste (tomato puree) – 3 tbsp
  • A mixture of “five spices” (black pepper, fennel seeds, cloves, cinnamon, ginger) – 1 teaspoon.
  • Cayenne pepper – 1 teaspoon
  • Paprika – 2 teaspoon
  • Black pepper, freshly ground – 1 teaspoon.
  • Parsley – 1 handful
  • Garlic – 4 cloves
  • Sea fish, white – 550 g
  • Vegetable broth (broth), hot – 2 cups
  • Couscous – 450 g

How to cook baked sea fish in the oven with couscous and zucchini:

  1. Preheat oven to 150 degrees. Cut the zucchini in half lengthwise, finely grate the zest, finely chop the parsley and garlic. Cut the fish into small pieces. Toss the zucchini with 2 tbsp oils. Fry in a hot skillet (in portions) for 2 minutes on each side.
  2. Combine remaining olive oil with lime zest and juice, tomato paste, five-spice mix, cayenne pepper, paprika, black pepper, parsley, and garlic. Add fish, broth, couscous, zucchini, and mix.
  3. Place in a baking dish, cover with foil and cook in the oven for 20 minutes. Stir and serve baked sea fish with garnish to the table.
