Ingredients

  • 500 g berries, mixed
  • 1 packet vanilla sugar
  • 4 tablespoon desiccated coconut
  • 4 egg (s)
  • 2 tablespoon sugar
  • 250 ml milk
  • 150 grams flour
  • salt
  • Oil, for frying
  • powdered sugar

Instructions

  1. Chop the berries according to their size and mix with the vanilla sugar. Briefly toast the coconut flakes in a dry pan until they smell and remove.
  2. Mix the yolks with the sugar, milk and flour. Beat the egg white with a pinch of salt until stiff and fold into the mixture.
  3. Heat some oil in a large pan, pour in half of the batter. Sprinkle 2 tablespoons of coconut flakes evenly on top. Fry the dough over a low heat for approx. 5 minutes, then turn. After 2-3 minutes, tear into pieces with 2 forks and fry until golden brown. Fry the rest of the batter in the same way. Serve the pancakes with berries and sprinkle with icing sugar.
