Ingredients

  • 400 g flour
  • 2 egg (s)
  • 150 ml water
  • 0.5 teaspoon ½ salt
  • 200 g beef
  • 250 g pork
  • 1 onion (s)
  • 5 cloves garlic
  • 3 tablespoons broth or water
  • salt and pepper
  • sour cream or butter

Instructions

  1. Knead a smooth dough from flour, eggs, water and salt and roll it out thinly (max. 2mm) on a floured surface. Cut out cookies (5 cm diameter) with a glass or a cookie cutter.
  2. For the filling: spin the meat, onions and garlic through the mincer, stir in the stock or water until smooth and season with salt and pepper.
  3. Place the filling in portions on the cut out pastry plates, coat the edges with egg white and press together, preferably with a fork. Twist the tips of the crescents together into ears (similar to Totellini). Let simmer in plenty of salted water over low heat. Serve with sour cream or melted butter.
