  • Couscous – 2 tbsp
  • Canned tomatoes – 120 g
  • Bacon – 100 g
  • Potatoes – 200 g
  • Onions – 50 g
  • Carrots – 100 g
  • Garlic – 1 clove
  • Vegetable oil – 3 tbsp
  • Bay leaf – 1 pc.
  • Salt to taste
  • Ground allspice pepper (for serving) – to taste
  • Greens to taste
  • Water – 700 ml

Soup with Couscous, Bacon and Vegetables Instructions

  1. For cooking, use a thick-walled saucepan, pot, or deep skillet. Pour in vegetable oil and heat.
    Cut the bacon into thin slices. Dip in hot oil. Fry over high heat for 4-5 minutes, until golden brown, stirring occasionally with a spatula.
  2. Place the bacon on a paper towel.
  3. Peel the onions and carrots. Cut into small random pieces. Place the chopped vegetables in the same bowl where the bacon was fried. Cook over medium heat for 4-6 minutes to soften the vegetables.
  4. Peel potatoes and cut into cubes. Place the potatoes in a saucepan. Add washed couscous.
  5. Pour in water. Stir and put on fire. Bring to a boil and cook over low heat for 9-10 minutes until the potatoes and cereals are tender.
  6. Meanwhile, finely chop the washed greens. Cut the tomatoes into cubes (you can remove the skin beforehand). Peel and grate the garlic.
  7. Put the prepared ingredients in a saucepan. Add bay leaf and salt to taste. Add most of the fried bacon (save a little for serving). Bring to a boil. Boil for 2-3 minutes.
  8. Add chopped greens at the end of cooking. Stir. Bring to a boil and turn off the heat. Cover and let sit for 10 minutes. Soup with couscous, bacon, and vegetables is ready.
