Process all ingredients except for the salted water into a dough. Let the dough knead for a long time in the food processor. It has to be pretty firm and not sticky. As spelled flour takes some time to swell, put the dough in the refrigerator for at least 1 hour.
Then knead the dough well again, roll out very thinly and cut into thin strips (or use the pasta machine).
Bring the salted water to the boil, but only put the pasta in boiling water. The water should no longer boil. Cooking time: approx. 5 min.
