Spicy Pickled Cabbage with Vegetables and Lime

Crispy cabbage marinated with carrots, garlic, bell peppers and onions is a versatile dish that can serve as a vegetable side dish or as an independent snack. The addition of hot pepper and lime juice gives the dish a spicy taste and pleasant citrus notes. Try it!

Ingredients

  • White cabbage – 1 head of cabbage (about 1 kg)
  • Carrots – 1-2 pcs. (230 g)
  • Bulb onions – 1-2 pcs. (240 g)
  • Bulgarian red pepper – 1 pc. (240 g)
  • Fresh hot peppers – 2 pcs. (30 g)
  • Garlic – 8 cloves (50 g)
  • Green onions – 3 pcs. (30g) + 1-2 feeding nibs
  • Dried thyme – 0.5 teaspoon
  • Black peppercorns – 15-20 pcs.
  • Salt – about 1 tbsp (18-20 g) / to taste

For the marinade:

  • Table vinegar 9% – 125 ml
  • Lime – 0.5 pcs. (40 g)
  • Water – 340 ml

Directions

  1. Prepare the required ingredients. Peel the onions and garlic. Remove the pods from the hot and sweet peppers. Boil water and refrigerate.
  2. Cut or grate cabbage and carrots into thin strips. Cut the onion into thin half rings.
  3. Cut half the garlic into slices, keep the remaining cloves intact. Cut sweet peppers into thin strips, hot peppers into rings or half rings. Chop green onions finely.
  4. Connect all prepared components. Season to taste (I add about 18-20 g).
  5. Mix everything thoroughly. Let the vegetable mixture sit for 5 minutes, then taste and add more salt if necessary.
  6. Place vegetables in a 3 liter jar, alternating layers with whole garlic cloves. Add black peppercorns and dried thyme.
  7. Prepare the marinade. Squeeze out the juice of half a lime. Combine chilled boiled water, vinegar and lime juice.
  8. Pour the marinade into the jar of cabbage and vegetables.
  9. Tamp the cabbage lightly so that it is completely covered in the marinade. Close the jar hermetically with a lid and place in the refrigerator for 1-2 days to marinate the cabbage and vegetables.
  10. Spicy pickled cabbage with vegetables and lime is ready. Sprinkle a pinch of green onions or other fresh herbs on top of the dish before serving, if desired
