Ingredients

  • 300 g couscous
  • 1 tomato (s)
  • 2 small onions
  • 1 clove garlic
  • 1 bunch parsley
  • 2 tablespoon olive oil
  • 300 ml vegetable broth or chicken broth
  • 4 dashes Tabasco, red
  • Tomato paste (1 - 2 tablespoon)
  • salt and pepper
  • possibly cayenne pepper

Instructions

  1. Wash or peel the onions, tomatoes, garlic and parsley. Then cut very small and sweat in 1 teaspoon of hot olive oil for about 1 minute. Then add the tomato paste and fry briefly, salt and pepper well. If you like it spicy, you can add a little cayenne pepper and the Tabasco. Deglaze with the vegetable or chicken stock and bring to the boil. As soon as the broth boils, remove the pan from the heat and stir in the couscous. Put the lid on the pan and let it swell for about 10 minutes. Then add another 1 teaspoon of olive oil and season again with salt, pepper and Tabasco if you like.
  2. Delicious as an accompaniment to meat or simply as a main meal. Also delicious when cold.
