Ingredients

  • 600 g spinach leaves
  • 1 tablespoon olive oil
  • 1 onion (s)
  • 2 cloves garlic
  • 250 g whipped cream
  • 100 g cheese, Emmentaler, rated
  • salt and pepper
  • possibly chili powder

Instructions

  1. Finely dice the onion and garlic and sauté in olive oil. Add the spinach and cook until it collapses (if you are using frozen spinach, defrost it beforehand and pour off the water). Season well with salt and pepper (possibly also grated chilli).
  2. Mix the whipped cream and Emmentaler.
  3. Put the spinach in a coated baking dish (or another buttered one) and spread the whipped cream over it.
  4. Bake at 200 degrees (electric stove) for about 20 minutes.
  5. The amount is enough for 4 people as a side dish to e.g., turkey steaks, saltimbocca or roast tenderloin.
  6. As a main course for 2 people, I serve boiled potatoes, baguette and Chardonnay Morillon with it.
  7. Instead of Emmentaler, mozzarella is also a tasty alternative, but then please season it more strongly!
