Ingredients

  • 30 g butter
  • 0.5 tablespoon ½ flour
  • 1 liter beef broth
  • 200 g peas
  • 200 g spinach, (chopped cream spinach)
  • liter ⅛ cream
  • a bit salt
  • some pepper, whiter

Instructions

  1. Melt the butter in a pan, add the flour and stir well, but do not sweat it dark, it should remain light. Gently deglaze with the cold bouillon, gradually adding. Let cook for about 5 minutes.
  2. Add the spinach and let it cook for 10 minutes, then add the peas and cook gently for another 20 minutes.
  3. Puree the whole thing with the hand blender and add the cream. Season to taste with salt and pepper.
