Ingredients

  • 500 g peas, frozen
  • 750 ml vegetable stock
  • 2 tablespoon cornstarch
  • 250 ml sparkling wine
  • 250 ml sweet cream
  • salt and pepper

Instructions

  1. Boil the peas in the broth for 5 minutes. Scoop the peas out of the soup, puree them and add them back to the soup. Mix the starch with a little water and use it to thicken the soup. Season the soup with salt and pepper and pour it into a soup tureen to make it look good.
  2. Whip the cream until stiff.
  3. At the table, carefully stir the champagne and cream into the soup and enjoy immediately.
