Ingredients
Beef fillet – 700 g
Bacon – 4 strips
Olive oil
Salt to taste
Ground black pepper – to taste For aromatic oil:
Butter (softened) – 4 tbsp
Blue cheese (crumbled) – 2 tbsp
Fresh parsley (chopped) – 1 tbsp
Lemon zest – 1 teaspoon
Salt – 0.5 teaspoon.
Instructions
Turn on the grill to preheat to medium-high temperature. Grease the wire rack with oil. Prepare aromatic oil. To do this, mix softened butter with cheese, parsley, zest, and 1/2 teaspoon of salt, mash with a fork. Put the butter on a plastic wrap, roll up a roll 7.5 cm long, put it in the refrigerator until it solidifies, for 30 minutes.
Cut the fillets into 4 slices 3.5 cm thick (about 180 g each). Wrap a strip of bacon over each steak. Tie the bacon to the fillet with kitchen string. Grease the meat with butter, sprinkle with salt and pepper on both sides.
Place the fillets on a wire rack and cook for 4 minutes on each side. Transfer the fried meat to a board, cover with foil, leave for 5 minutes. Remove the threads before feeding. Put a piece of fragrant oil on the hot fillet.
