Stew with Liver and Broccoli Ingredients

  • Beef liver – 500 g
  • Leeks (white part) – 1 pc. (200 g)
  • Salt
  • Ground black pepper
  • Vegetable oil – 4 tbsp
  • Flour – 2 tbsp
  • Fresh green peas or ice cream – 150 g
  • Green beans, fresh or frozen – 150 g
  • Broccoli – 300 g
  • Tomatoes – 2 pcs.
  • Parsley and dill (chopped) – 2 tbsp
  • Italian dry herbs

Stew with Liver and Broccoli Instructions

  1. Clean the liver from films and ducts and cut into small pieces. Wash the leeks, peel, cut in half, and cut into half rings.
  2. Sprinkle the liver with flour and fry in half the oil. No need to brown. Salt and pepper.

  3. Dismantle broccoli for inflorescences. Vegetables can be boiled separately in salted boiling water, or in one saucepan, tossing them in at different intervals. Since the beans take longer to cook, we throw them in first. After three minutes add the peas and after another 5 minutes add the broccoli. Cook everything together for 5 minutes. We put it in a colander.
  4. Saute the leek in the remaining oil in a deep frying pan. Add tomatoes cut into slices to it. Fry together for 5-7 minutes. Salt and pepper.

  5. We spread the liver on top. On it – green boiled vegetables. Sprinkle with dry herbs, cover the pan with a lid, reduce heat and simmer the liver stew for 15 minutes.
  6. Sprinkle the finished stew with herbs. You can boil pasta, potatoes to the liver stew. The liver stew is ready.
