Ingredients

  • 50 g bacon, fat, smoked, finely diced
  • 2 large onions, cut into thin wedges
  • 1 piece (s) garlic, Chinese if possible
  • 1 kg tripe, ready-cooked and cut into strips
  • 5 potatoes, peeled and cut into cubes
  • 2 bay leaves
  • 1 tablespoon paprika powder, noble sweet
  • 1 tablespoon caraway powder
  • 1 teaspoon thyme, amount to taste
  • 1 teaspoon tarragon, fresh or dried
  • 1 teaspoon marjoram, fresh or dried
  • 2 sprigs savory
  • salt and pepper
  • 500 ml meat broth or bone broth

Instructions

  1. Leave out the bacon and fry the onions with the garlic until translucent over a low heat, add the potatoes and the tripe. Mix in all the spices, add meat stock and simmer for about 30 minutes, season to taste and serve hot.
