Ingredients

Instructions

  1. First preheat the oven to 200 ° C (top / bottom heat, circulating air: 180 ° C, for combi ovens top / bottom heat is recommended first). Line a quiche pan - approx. 30 cm, or a casserole or springform pan with the puff pastry, the edge height should be 2 - 3 cm.
  2. So that everything comes out well later, perforate the dough with a fork. Any leftover dough can be cut into thin strips for the grid topping and put aside.
  3. Dice the boiled ham and spread on the dough. Wash the spring onions and cut into pieces approx. 1 cm in size, also sprinkle on the dough. If desired, everything can be sprinkled with a little chopped garden mint.
  4. Put the cremefine and the eggs with nutmeg, salt, dill and pepper in a mixing bowl (better the work bowl of the food processor) and stir the whisk for ten minutes until frothy. There has to be a lot of air in, so you should really spend the time.
  5. In the meantime, peel the garlic and chop it into small pieces. Cut off the cress leaves and chop finely if necessary. Put both in the egg mixture and fold in. Carefully pour the egg mixture over the ham and spring onions and spread the grated cheese over it. Place any remnants of dough as a rhombus or ring pattern.
  6. Bake the quiche in the lower third of the oven for 25 minutes. Keep calm, the quiche may collapse if the door slams. If possible, set the oven to circulating air and 180 ° C after 25 minutes and cook for about 10 minutes until the desired brown color is achieved.
  7. Take the quiche out of the oven and enjoy hot or cold. Cucumber or leaf salad tastes good with it.
