Suusamyr (Poultry Liver Appetizer)

A very tasty dish of Kyrgyz cuisine lies under such an unusual name as “Suusamyr”. In other words, it’s chicken liver (or liver of other poultry) baked with sour cream and cheese in the oven!

Servings: 2

Ingredients

  • Chicken liver – 250 g
  • Onions – 1 pc.
  • Butter or sunflower oil – 1-2 tablespoon.
  • Sour cream – 4 tablespoon.
  • Hard cheese – 50 g
  • Salt – to taste

Directions

  1. Cut the chicken liver into small pieces. Fry it in butter or sunflower oil for 3-5 minutes.
  2. Add the diced onions.
  3. Fry the onion and liver over medium heat for about 5 minutes more and add salt while frying.
  4. Put the fried liver and onions in some portion dishes (cocotte or ramekins).
  5. Fill the livers with sour cream, 2 tablespoons for each dish.
  6. Fill the liver under the sour cream with the coarse grated hard cheese.
  7. Bake the liver under the cheese in a preheated 180-degree oven for 10 minutes.

The liver baked with sour cream and cheese is done.
