Recipe for making sweet potato, ricotta and Parmesan gnocchi with Gouda cheese, milk, onion and flour sauce.

Ingredients
For gnocchi: sweet potato – 450 Grams
Ricotta – 180 Grams
Brown sugar – 1 Tbsp. the spoon
Salt – 1.5 Art. spoons
Nutmeg – 1/4 Teaspoon
For the sauce: milk – 2 glasses
Bulbs – 1/4 Pieces
Garlic – 2 Cloves
Sage Leaves – 3 Pieces
Salt and freshly ground white pepper – – To taste
Butter – 3 Tbsp. spoons
Flour – 3 Art. spoons
Gouda Cheese – 1 Glass
Directions
Line a large baking sheet with parchment paper. Chop the potatoes with a fork. Place the sweet potatoes on a plate and microwave for about 5-6 minutes on each side. Cut in half and refrigerate.
Grind the potatoes in a medium bowl to a puree consistency, place in a large bowl. Add ricotta and mix well.
Add the grated Parmesan cheese, brown sugar, 1 teaspoon salt, nutmeg and stir until smooth.
Add flour, about 1/2 cup at a time, and stir until you have a soft dough.
Place the dough on a floured surface, divide into 3 equal portions. Roll it out between your palms, forming long ropes of the dough about 50 cm long and 2.5 cm in diameter. Cut each rope into 20 pieces.
Roll each piece along the fork tines. Put on a baking sheet.
Heat a large saucepan of water, add 1 tablespoon of salt and bring to a boil. Place the gnocchi in a saucepan in several passes and cook until tender, 5 to 6 minutes. Put the finished gnocchi on a baking sheet and let cool. Meanwhile, prepare the sauce. In a small saucepan, combine milk, onion, garlic and sage. Heat over medium heat until small bubbles appear on the surface, about 5 minutes. Do not bring to a boil. Remove the pan from heat and let stand for 10 minutes. Remove the onion, garlic and sage from the milk.
Melt butter in a saucepan over medium heat. Add flour and fry, stirring occasionally, for 1 minute. Add milk gradually, whisking. Reduce heat to low and continue whisking until thick sauce, 4 to 5 minutes. Dip a wooden spoon in the sauce until the sauce is completely covered.
Slide your finger along the back of the spoon – there should be a clean path from the finger
Strain the sauce into a clean saucepan. Add 1 cup finely grated Gouda cheese. Simmer over low heat, whisking until the cheese is melted. Season with salt and pepper to taste. Serve the gnocchi with cheese sauce.
