Ingredients

  • 3 large sweet potato (s)
  • 0.5 ½ head white cabbage
  • 2 onions)
  • Caraway seeds, whole or ground
  • salt and pepper
  • some oil, for frying
  • 0.5 liter ½ milk (oat milk), also almond or soy milk
  • 1 handful cashew nuts
  • 50 g tomato paste
  • 3 cloves garlic
  • some vegetable stock, instant
  • some chili powder
  • oregano
  • basil
  • possibly herbs, fresh or dried
  • 2 tablespoon oatmeal
  • 2 tablespoon sunflower seeds
  • 2 tablespoon yeast flakes

Sweet Potato Lasagne with White Cabbage

Instructions

  1. Clean the cabbage and cut into fine strips, then scald with boiling water and let it steep for about 10 minutes. Then pour into a sieve and drain.
  2. In the meantime, peel the onions and cut them into cubes. Heat the oil in a pan. Now turn the plate down to 2/3 and fry the onions until they start to smell. Now add the drained cabbage in portions to the pan and fry until everything has turned color. Stir as little as possible and only swirl the contents every now and then. Season the cabbage with caraway seeds, salt and pepper.
  3. Peel the sweet potatoes and cut into thin slices.
  4. For the sauce, pour oat milk, cashew nuts, tomato paste, garlic, vegetable stock, herbs and spices into a tall container and puree with the magic wand. The cashew nuts give the sauce a creamy consistency.
  5. For the flake mix, grind oat flakes, sunflower seeds and yeast flakes in a blender.
  6. For the lasagna, fill a sufficiently large baking dish with sweet potatoes, cabbage and the sauce in layers. The lasagna shouldn`t be higher than the edge of the pan. After the last layer of sauce, sprinkle everything with the flake mix and bake in the oven at approx. 180 ° C for about 1 hour.
  7. To see if the lasagna is ready, simply prick the sweet potatoes with a fork or knife and check if they are soft.
