Ingredients

  • 450 g batate (s) (sweet potatoes), diced
  • 50 g butter
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 red pepper (s), diced
  • 1 green pepper (s), diced
  • 2 banana (s), thickly sliced
  • 3 slices white bread without crust, thick. diced
  • salt
  • pepper

For the dressing:

  • 2 tablespoon honey, clearer
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 2 tablespoon chives, freshly chopped

Instructions

  1. Cook the sweet potatoes in a saucepan with boiling water for 10-15 minutes. Drain thoroughly and set aside.
  2. Meanwhile, melt the butter in a pan. Add lemon juice, garlic and paprika and cook for 3 minutes, stirring constantly.
  3. Add the banana and simmer for 1 minute more, lift out the vegetables and banana with a slotted spoon and mix with the sweet potatoes.
  4. Put the bread cubes in the pan and roast for 2 minutes while stirring until golden brown. Heat the ingredients for the dressing in a saucepan until the honey is very runny.
  5. Put the potato mixture in a salad bowl and season with salt and pepper. Pour in the dressing, stir well and sprinkle the salad with the croutons. Serve immediately.
  6. Use firm, still slightly unripe bananas, as they don`t disintegrate as quickly when steamed.
