Ingredients

  • 750 g Swiss chard
  • 2 cloves garlic, cut into wafer-thin slices
  • 6 tablespoon olive oil
  • 3 tablespoon balsamic vinegar
  • 2 teaspoons mustard
  • salt
  • 1 pinch (s) sugar
  • Pepper, freshly ground

Instructions

  1. Clean and wash the chard, remove the stems in a V-shape, put the leaves aside. Cut the stems into pieces, let them cook in boiling salted water for about 15 minutes, then remove them from the water.
  2. Wash the chard leaves, add to the boiling vegetable water, briefly blanch, drain, rinse with cold water and roughly chop. Mix the stems and chopped leaves with the garlic slices and the salad dressing ingredients.
  3. Let it flow well (at least 30 minutes). Arrange on plates.
  4. Any decoration (e.g. grated Parmesan or Pecorino, diced tomatoes or red peppers) variable, either as a snack in between or a lean dinner.
