Ingredients

  • 1 egg (s)
  • 200 g puff pastry, fresh
  • 2 pear (s)
  • 4 sprigs thyme, fresh
  • 160 g crème fraîche
  • 30 g ham, (Serrano)
  • 40 g parmesan cheese
  • some salt and pepper

Instructions

  1. Preheat the oven to 190 degrees, with convection to 170 degrees.
  2. Separate the egg and whisk the yolks lightly.
  3. Roll out the puff pastry and place on a baking sheet. Fold the edges over and brush with the egg yolk.
  4. Wash the pear and cut into wedges.
  5. Wash the thyme and pick off the leaves.
  6. Spread crème fraîche on the dough, season with salt and pepper. Top with slices of pear and cut ham slices.
  7. Sprinkle with grated parmesan and half of the thyme.
  8. Bake in the oven for about 20 minutes until golden brown.
  9. Sprinkle with the remaining thyme before serving.
