Ingredients

  • 2 tablespoon fish sauce (Nam Pla)
  • 3 teaspoons sugar
  • 1 stalk lemongrass, cut into thin rings
  • 3 cm ginger root, peeled and chopped
  • 2 chilli pepper (s), red, hot, in fine rings
  • 2 lime (s)
  • 6 shallot (s), small, in fine rings
  • 1 handful chives, chopped
  • 2 handfuls Thai basil (Horapa), slightly chopped
  • 2 handfuls coriander greens
  • 24 king prawns, cooked, peeled, deveined

Instructions

  1. First you peel off the peel of the limes in zest and cut them very finely. The fruits are squeezed out and the juice is mixed with all the other ingredients except the prawns, shallots and the green ingredients in a large bowl and put in the refrigerator for at least 1 hour 30 minutes. To serve, carefully fold in the prawns and herbs. Do not be economical with the amount of herbs!
