Ingredients

  • 2 egg yolks
  • 50 grams sugar
  • some lemon (s) - zest, grated
  • 300 g mascarpone
  • 2 egg whites
  • 1 pinch (s) salt
  • 1 tablespoon sugar
  • 3 dl coffee, very strong
  • 1 tablespoon sugar, (to taste)
  • 3 tablespoon Cointreau, Grand Marnier or rum
  • 150 g ladyfiners

Instructions

  1. Mix the egg yolks and sugar with a whisk until the mixture is light. Stir in the lemon zest and mascarpone. In another container, beat the egg white and salt until stiff until the ice snow is made. Add 1 tablespoon sugar and continue beating briefly. Carefully draw the ice snow under the mascarpone mixture.
  2. Prepare very strong coffee and place about a cup full in a soup plate, add half of the sugar and schnapps, stir. Swirl the ladyfingers in the hot coffee and let them soak, then use them to lay out the bottom of an approx. Spread half of the mascarpone mixture over it, then another layer of biscuits and finally another mascarpone mixture. Chill for at least 1/2 day. Just before serving, sieve with cocoa powder.
