Ingredients
- 1 onion (s), finely chopped
- 1 clove (s) garlic, finely chopped
- 1 large chilli pepper (s), green
- 2 tablespoon vegetable oil
- 500 g tomato (s), passed
- 200 ml vegetable stock
- 250 ml coconut milk
- 1 avocado (s)
- 1 tablespoon lime juice or lemon juice
- basil
- salt and pepper

- Sweat the onion, garlic and chilli pepper in hot oil. Add the vegetable stock and the tomatoes. Bring to the boil briefly and puree finely with a hand blender. Now add the coconut milk and let it steep for a moment. Then season with salt and pepper.
- Peel the avocado, remove the core and cut into cubes. Then drizzle with lime or lemon juice and add to the soup.
- Arrange on plates, sprinkle with basil as needed and serve.
