Ingredients

  • 400 g tortellini
  • 2 tablespoon olive oil
  • 2 tablespoon butter
  • 100 g peas
  • 100 g carrot (s), diced
  • 100 g broccoli, cut into florets
  • 1 cup vegetable broth
  • 1 ½ cup crème fraîche
  • 50 g cheese, (Gouda)
  • 50 g cheese, (Edam)
  • salt and pepper
  • 1 pinch (s) nutmeg

Instructions

  1. Cook the tortellini in salted water with the olive oil until firm to the bite, drain, rinse and drain well.
  2. Melt the butter and briefly sweat the vegetables in it. Pour in the vegetable stock and steam the vegetables over moderate heat until they are al dente.
  3. Mix the creme fraiche with the grated cheese. Season well with salt, pepper and nutmeg.
  4. Add the tortellini to the vegetables and heat. Spread the creme fraiche with the cheese on top. Season well with salt, pepper and nutmeg, heat again, arrange and serve immediately.
