Cut the spring onions into thin slices. Drain the pineapple pieces and collect the juice. Add the pineapple, spring onions, diced paprika, corn and sultanas to the rice and mix gently.
Dressing:
Add all ingredients to the pineapple juice and stir well. Season with salt and pepper and pour over the salad. Mix well and serve.
Tip:
