Ingredients

  • g 2,500 turkey le (s), a little less is also enouh
  • 250 ml sauce, hoisin
  • 60 ml maple syrup, alternatively honey
  • 5 cloves garlic, pressed
  • 1 piece (s) ginger, 5 cm, grated
  • 1 tablespoon oil (garlic)
  • 1 tablespoon sesame oil
  • 1 teaspoon sambal oelek, alternatively fresh chilli with seeds, chopped
  • Chili powder
  • Sauce thickener

Instructions

  1. For the marinade, whip the hoisin sauce, maple syrup, garlic, ginger, sambal and the two oils.
  2. Remove thick pieces of fat from the turkey legs and cut deep several times to the bone, 4-6 times depending on the thickness. Put the marinade on the meat with a brush, also generously in the cuts. Then pour the rest of the marinade over it and put it in the fridge for 1 day.
  3. The next day, use a brush to remove excess marinade, but keep all of it.
  4. Heat the oven to 170 ° C fan oven.
  5. Place the legs in a coated baking dish, season with chili powder and cook for about 2 hours. Be careful that nothing burns, otherwise lower the temperature.
  6. Then take the legs out of the mold and let them rest for 10 minutes in the switched off oven. Remove the roast set from the casserole dish with a little water, pour into a microwave bowl (or saucepan) and add the marinade. Let simmer for a total of approx. 5 minutes (micro full power). If necessary, thicken with a little sauce thickener and simmer for another 3 minutes.
  7. Cut the legs into pieces, serve with rice and sauce. The meat should be tender as butter.
