Ingredients

  • 4 turkey schnitzel, thinly sliced
  • some oil, for frying
  • 1 onion (s), finely chopped
  • 3 pepper (s), red, green and yellow
  • 500 g tomato (s)
  • 2 tablespoon tomato paste
  • 200 ml vegetable stock
  • 2 cloves garlic, finely chopped
  • 1 sprig rosemary, finely chopped
  • 1 tablespoon sugar
  • salt and pepper
  • possibly cornstarch to thicken the sauce

Instructions

  1. Season the turkey schnitzel with salt and pepper and fry on both sides in a pan with a little oil. Take out and keep warm.
  2. Put the chopped onion in the pan and let it fry. Halve, core and cut the peppers into strips. Quarter, core and dice the tomatoes.
  3. Add the pepper strips and diced tomatoes to the onions in the pan, also add the tomato paste and mix everything well. Then add the vegetable stock. Add the garlic, rosemary and sugar and season with salt and pepper to taste. Let the sauce simmer gently for about 10 minutes. Then put the turkey schnitzel in the sauce and let it steep for about 5 minutes.
  4. If the sauce is a little too runny, it can be thickened with a little mixed cornstarch.
  5. We prefer to eat rice and salad with it.
