Turkish Delight from Carrots

Having conjured a little over the stove, you can make a delicacy from ordinary carrots. The only difficulty is waiting for 10-12 hours. That is how much time it will take Turkish delight to spend in the refrigerator. However, you will be rewarded with the wonderful taste of this dessert.

Ingredients

  • Carrots – 400 g
  • Sugar – 150 g
  • Corn starch – 150 g
  • Peeled walnuts – 80 g
  • Lemon zest – 1 teaspoon
  • Orange zest – 1 teaspoon
  • Salt – 1 pinch
  • Powdered sugar for dusting – 50 g

Directions

  1. Let’s prepare the products.
    Peel the carrots.
    Wash the orange and lemon thoroughly.
  2. Chop the carrots in any convenient way. We passed the vegetable through an electric meat grinder. You can also use a fine grater.
  3. Put the chopped carrots in a saucepan, add sugar and salt. Set over medium heat and add 3 tablespoon. tablespoons of water so that the carrots do not burn in the first minutes of cooking (then it will let the juice out). Leave the carrots to simmer in the syrup for about 20 minutes from the moment of boiling, stirring regularly.
  4. Using a fine grater, remove the zest first from the lemon and then from the orange.
  5. Add lemon and orange zest to the sweet carrot mass. Let’s mix.
  6. Dilute starch in 50 g of water and mix until smooth.
  7. Pour the diluted starch into a saucepan for the carrots, stirring constantly.
  8. The carrot mass will begin to thicken. Remove the saucepan from the stove when the mass begins to move away from the walls of the saucepan.
  9. Coarsely chop the walnut kernels. Each piece can be cut into two pieces. Add the nuts to the carrot mass and mix.
  10. Cover a convenient form with foil. Put the carrot-nut mass on the bottom of the mold, leveling it with a spoon. You should get a layer 3-4 cm thick. Let’s send the form to the refrigerator for 10-12 hours, covering it with cling film in contact.
  11. Remove the layer from the mold and carefully cut into cubes of the desired size. Dip each cube of ready-made Turkish delight in powdered sugar and serve. Bon Appetit!
