  • Minced pork or beef – 250 g
  • Potatoes – 300 g (3 pcs.)

  • Cream, 15% fat – 200 ml
  • Butter – 50 g
  • Hard cheese – 30 g
  • Ground paprika – 1 teaspoon
  • Salt – 1 teaspoon
  • Ground black pepper – 0.25 teaspoon
  • Sugar – 1 teaspoon
  • Fresh parsley – 2-3 sprigs
  • Dry Italian herbs – 1 teaspoon
  • Lettuce – 2 small leaves
  • Water – 1.5 l

  1. Prepare all ingredients. Convenient when everything is at hand.
    Fresh parsley can be replaced with dried (in this case, 1/2 teaspoon will be needed).

  2. Chop fresh parsley with a sharp knife.
  3. Melt half the butter in a skillet and add the minced pork. Add parsley, sugar, paprika, Italian herbs, salt, and black pepper.
  4. Toss the minced meat with herbs and spices. Then grate the peeled clove of garlic there on a fine grater (or squeeze through a press). Fry for 5-6 minutes, periodically breaking the minced meat lumps with a wooden spatula.
  5. The meat will slightly decrease in volume (roast) and, thanks to paprika, herbs, and garlic, will acquire a very beautiful color and aroma.
  6. Pour 1.5 liters of water into a saucepan and bring to a boil over high heat.
    Peel the potatoes, cut into large cubes and send them to boiling water. Cook the potatoes until tender (about 12-15 minutes).
  7. Cut the peeled onion into small cubes. Finely chop the remaining peeled garlic clove.
    In another skillet, melt the remaining butter and sauté the onions and garlic until golden brown.
  8. Chop the finished potatoes in a broth in mashed potatoes. You can use a potato grinder or hand blender for this.
  9. Add the fried onions and garlic, bring to a boil and cook for 2-3 minutes.
  10. Next, pour the cream into the pan, bring to a boil, and cook for another 5 minutes.
  11. Then put the minced meat in a saucepan, add salt to taste, and cook for another 10 minutes.
  12. Tuscan creamy soup with minced meat is ready. Turn off the stove. Leave the soup on a warm stove to infuse for another 5-7 minutes.
  13. Grate the cheese on a fine grater. Pour the soup into portioned bowls, place in each bowl half a leaf of lettuce and 1/2 cup each. tablespoons of grated cheese.
