Vegan Burrito with Pancakes

A huge passion for Latin American cuisine has sparked in me to cook a delicious vegan burrito with pancake! The recipe is simple and at the same time vegetarian. In the role of a soft tortilla, we have a pancake cooked in water, and in the role of a vegan filling, we have tofu with spices and arugula.

Ingredients

  • Pancakes4 pcs
  • Tofu200 g
  • Salt 1 teaspoon
  • Cumin (cumin) ½ teaspoon
  • Turmeric 1 teaspoon
  • Olive oil 1 tablespoon
  • Arugula 100 g

Directions

  1. Cooking the filling. In a preheated frying pan, crumbling tofu with your hands, add spices and fry for 3 minutes.
  2. Let’s start the burrito. Spread toasted tofu and washed arugula on a pancake. You can also add vegetables such as tomato, cucumber, or pepper.
  3. Gently roll up the roll with the filling. For a more sophisticated flavor, you can fry the vegan burrito on one side. Serve with herbs and sauces. Bon Appetit;)
