Ingredients

  • 4 large tortilla (s) (wheat)
  • 1 kg potato (s)
  • 400 g bacon cubes
  • 400 g paprika (rill), spicy if desired
  • 4 medium onion (s)
  • 4 egg (s)
  • 200 g cheese (ratin cheese), rated

For the sauce:

  • 1 onion (s)
  • 400 g minced meat, mixed
  • 500 g tomato (s), passed
  • Chilli sauce
  • Salt and pepper
  • 1 tablespoon, heaped tomato paste
  • some white wine
  • Vegetable oil

Instructions

  1. Wash the grilled peppers, cut lengthways and remove the seeds. Then roast on a baking sheet in the oven on grill setting / convection at 220 ° C, turning occasionally, then dice finely.
  2. Boil the potatoes al dente, peel and dice. Process the eggs into scrambled eggs.
  3. For the minced meat sauce, finely dice an onion. Sweat the minced meat, onion and tomato paste in hot oil, deglaze with a little white wine, add the tomatoes and let simmer. Finally, season with pepper, salt and, if desired, a little chili sauce.
  4. Finely dice the remaining four onions. Sear the bacon cubes in the pan, add the onions, potatoes and grilled peppers and toss over high heat for a few minutes. Then pepper and salt and work in the finished scrambled eggs.
  5. Then distribute the mixture over the 4 tortillas and form rolls. Place the tortilla rolls in a greased dish, spread the minced meat sauce over them and bake for about 5 minutes at a grill setting of approx. 220 ° C. Just before removing, sprinkle the cheese on top and let it melt.
