Ingredients

For the dough:

  • 200 g semolina (durum wheat)
  • 1 cup wheat flour
  • 1 cup cold water
  • a bit salt

For the filling:

  • 175 g smoked tofu
  • 100 g spinach leaves, frozen
  • 1 clove garlic
  • some basil, fresh or frozen
  • a bit salt
  • some water to moisten the edges

Instructions

  1. Dough:
  2. Knead durum wheat semolina, flour, water and salt together by hand until a firm, if possible no longer sticky dough is formed. If the dough is too sticky, add a little more flour, or water if it`s too dry. Wrap the finished dough in cling film and place in the refrigerator for a while until the filling and work surface are prepared.
  3. Filling:
  4. Put the slightly chopped smoked tofu, the thawed spinach, the garlic clove and the spices in a tall plastic bowl and chop with the hand blender. Then use breadcrumbs to ensure any consistency you want. If you use the recipe for Maultaschen, you should prepare the filling a little firmer.
  5. Take the dough out of the refrigerator and roll it out thinly on a floured work surface. Cut out circles with a diameter of approx. 5 cm from the dough, e.g. with a drinking glass. Enlarge the dough circles a bit by hand if the dough is not already thin enough. Place a hazelnut-sized amount of the filling in the center of each circle. Moisten the edge with water.
  6. Now the dough circle is shaped into tortellini: First, fold the circle over the filling into a semicircle, pressing the edges together well, the filling should be completely enclosed. The filled semicircle is then made into the shape of a moon, this can be done very well, for example, by folding it around your own finger; In this step, the two ends are pressed together so that the noodle remains in its typical shape.
  7. The tortellini must not lie on top of each other before cooking, otherwise they may stick to each other. Flouring them can also prevent them from sticking together.
  8. Cook the tortellini in boiling salted water for about 5-8 minutes.
