Ingredients

  • 400 g penne
  • 600 g veetables as desired
  • 3 cloves garlic
  • 2 tomato (s)
  • 4 tablespoon olive oil

For the sauce:

  • 3 tablespoon margarine
  • 150 g tomato paste
  • 4 tablespoon whipped cream or cremefine
  • 200 ml water
  • 1 teaspoon sugar
  • 1 tablespoon herbs, Italian (e.g. basil, oregano)
  • salt and pepper
  • Parmesan
  • Chilli powder

Instructions

  1. You can use any kind of vegetable with this recipe. There should be at least 3 types, depending on what`s left or which vegetables are in season.
  2. Cook the pasta al dente.
  3. In the meantime, clean the vegetables and cut them into small pieces. Press the garlic or chop it very finely. Cut the tomatoes into fine cubes.
  4. Heat olive oil in a large pan and sauté the garlic and vegetables in it. After about 10 minutes add the tomatoes. Salt and pepper well.
  5. For the sauce, melt the margarine in a small saucepan and then stir in the tomato paste. Add the whipped cream and water and stir well. Add sugar, herbs and spices and only bring to the boil for a short time.
  6. Drain the pasta and add to the pan with the sauce with the vegetables. Mix everything together well, season to taste and serve sprinkled with parmesan.
