- 2 thick carrot (s)
- 1 zucchini
- 1 onion (s)
- 300 g potato (s)
- 2 egg (s)
- 4 tablespoon flour
- salt and pepper
- 4 tablespoon vegetable oil for frying
- 500 g quark
- 50 ml milk
- 1 bunch chives
- 1 bunch parsley
- 2 cloves garlic)
- 1 medium onion (s)
- 1 teaspoon salt
- 1 pinch (s) pepper
- 0.25 teaspoon ¼ paprika powder, noble sweet

- Peel and finely chop the onion. Peel and grate the carrots, potatoes and zucchini. Mix everything well with the eggs and flour and season with salt and pepper.
- Heat the oil in a pan and let small heaps of the dough slide into the hot fat, flatten it a little and fry until golden yellow on both sides, not too hot.
- For the herbal quark, the quark is mixed well with the milk. Wash and clean the parsley and chives well. Cut the chives into fine rolls and finely chop the parsley.
- Peel the onion and garlic. Finely dice the onion and press the garlic cloves through a press. Add everything to the quark and stir in well. Season with paprika, salt and pepper.
- Serve the herb quark with the vegetable schnitzel.
