Instructions

  1. Wash the chicken and pat dry. Cut open in the middle of the chest and release the sternum (it`s easy, but doesn`t have to be). The skin is not peeled off. Unfold the chicken and divide the legs at the joint from the back, and separate the legs at the joint. Cut out the wings at the joint. Cut the breast into four parts. Divide the back as well.
  2. Salt all parts, then turn in the flour, beaten egg and breadcrumbs and press down a little. Bake until golden yellow in the hot oil. Serve garnished with lemon quarters and parsley.
  3. This is served with potato salad or a mixed salad, and recently also French fries.
