  • 250 g onion (s)
  • 4 tablespoon oil
  • 40 grams flour
  • 1 liter vegetable broth
  • salt and pepper
  • 3 slices white bread or toast bread
  • 3 slices cheese
  • 0.5 ½ bunch chives

Instructions

  1. Cut the onions into fine rings and roast in oil until golden brown. Dust with flour and roast a little more. Pour in the broth and cook for 20 minutes, season with salt and pepper.
  2. Cover the bread slices with the cheese, cut into cubes and place with the cheese side up for 2 minutes under the grill or in the hot oven with top heat.
  3. Serve the soup with the cheese croutons as a garnish and sprinkled with chopped chives.
