Ingredients

  • 2 small zucchini
  • 150 g feta cheese
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar, lighter
  • 1 pinch (s) smoked salt
  • 1 pinch (s) pepper, more colorful
  • some parsley, smooth, fresh

Instructions

  1. Wash the zucchini thoroughly and cut into bite-sized cubes. Dice the feta cheese as well. Put the zucchini in a bowl and season with salt, mix well and set aside for 10-15 minutes. Stir occasionally.
  2. Finely chop the parsley. Add the feta cheese and chopped parsley to the zucchini cubes.
  3. Make a marinade from olive oil, balsamic vinegar and pepper and pour over the zucchini. Mix well and let steep for at least 30 minutes.
  4. Stir again briefly before serving. and season with salt and pepper if necessary.
  5. Note: Since the zucchini per se is quite neutral in taste, it is particularly important to use a very good olive oil or balsamic vinegar with this salad. The salt doesn`t have to be the usual either. I like to use smoked or garlic salt.
